 12 GREENS SOUP

 
 

It can be quite a challenge to eat a lot of greens, so we thought we’d try and pack 12 into a soup! This not only helps with our ‘5 a day’ but significantly contributes towards our ‘30 different plants a week’ target.

We haven’t added weights or measures or times, as it’ll vary as to what you are putting in. We were making quite a big batch, so the saucepan was really big. You can add anything you like, just bear in mind the cooking times of each of the veg.  Fry off any leaks, onions, garlic, then add stock, the harder veg first, but don’t wait until it is cooked before adding the next veg. Softer stuff can get steamed on top with the lid on. The amount of stock really depends on how much veg you are using.

You don’t want the total cooking time to be too long, it’s easy to over cook it. We added the frozen peas after blending, they’ll soften if left for a few minutes, and provide a bit of texture. It also helps cool the soup, if you are planing to freeze. This will maintain the freshness and colour.

You can always add extra water / stock at the end and blend longer to create your preferred consistency. We kept the seasoning pretty simple, with a bit of garlic, salt and pepper. You could add mint to create more of a summer version. Here’s a short (2min 23sec) fun video for some inspiration!
