FRUIT & NUT SQUARES

Ingredients

Nuts & seeds of your choice, we used:

  • Walnuts

  • Cashews

  • Brazils

  • Almonds

  • Pecans

  • 4 seed mix of golden linseed, pumpkin, sunflower and hemp.

Dried fruits of your choice, we used:

  • Prunes

  • Dates (pitted)

  • Apricots

  • Mango

  • Cranberries

Optional

  • Pinch of sea salt

  • Coconut oil

Method

  • We like to lightly toast the nuts, add the seeds a bit later, as they’ll cook more quickly. You could make these completely raw and skip this stage.

  • Add the fruit to a food blender, then add the nuts and seeds and blend. Not too finely. We added the melted coconut oil and pinch of salt.

  • Depending on the mix, it might by more crumbly or less, to make it more set/stick, you can add more dates, for example, or blend it for longer.

  • Roll out on a baking tray lined with greaseproof paper to required thickness and then refrigerate.

  • After an hour or longer, remove from the fridge and slice into squares.

  • Another option is to drizzle melted chocolate over some and then refrigerate again. Or just have a square of (very dark) chocolate with it.

  • Enjoy anytime of day with tea or coffee :)
