HUMMUS
An easy to make and versatile snack.
A staple in our fridge, though it doesn't last long! Such a great versatile snack or dip to have with raw or roasted veggies or tapas, pitta or whack it in the pitta to make a kebab! We usually go for 2 or 3 tins of chickpeas and you get a lot of hummus for that! Simply drain the chickpeas (and keep the liquid - aqua faba - to make egg-free meringues !) and add to a blender, add extra virgin olive oil, sea salt, black pepper, a chopped clove or 2 of raw or roasted garlic, half to a whole lemon juice and some dried chilli or paprika.
Lots of recipes use tahini (sesame paste) but i don't bother with that. Hit the switch and blend to your preference, some like it smooth, others a bit rougher. You can also throw in pretty much anything else like red peppers or lentils or black eye beans to give different textures and flavours. It can take as little as a minute - watch the video below.
